Detailed Job Description Please note: this position may require working nights and/or weekends as determined by business needs.
Under the direct supervision of the Executive Director of Dining, the Director of Operations is responsible for shared leadership of the RIT Dining Department in the areas of organizational development, direction, management, budgetary and strategic planning, this Director is responsible for overseeing the management of the following areas: Brick City Cafe', Ritz Sports Zone, Commons, Grind, Gracie's, Beanz and Nathan's. This position manages all contracts with our visiting chef's as well as Jan/San and Paper supplies. This Director works with the Executive Director and his/her direct reports as an executive team to set up organizational objectives, revenue/return goals, develop metrics and manage strategic objectives set by the university for RIT Dining. Make necessary adjustments to menu selections, and prices as needed. Handle any service issues and complaints that may arise. This Director works in conjunction with Dining Managers and the Executive Dining team to collect yearly usage figures and determine with procurement the best suppliers for each category of food, beverages and supplies based on department specifications set by senior leadership.
Direct, define and assess the performance of 9 Managers, 14 Supervisors including expectations for unit level performance, training, development and compliance using performance definitions, metrics and feedback.
Engage customers and employees to assess product quality, customers experience and satisfaction.
Responsible for management/development of culinary innovation and training program
Ressponsbile for fostering sound relationships to ensure adherence to culinary standards for food quality, food costs, food presentation, sanitation, and menu planning.
Short and Long term Business Development
Utilize software and hardware applications within RIT Dining to optimize product placement, product rotation and sales revenue.
Prepare yearly budgets for operations of oversight including incremental staffing, price modifications and capital expectations.

Department/College Description About RIT Dining RIT Dining supports all meal plans both on campus and at select off campus locations. We are looking for a high energy team member that enjoys working in a busy environment serving customers. The successful candidate will need to be able to work with a diverse student work force which may include of deaf / hard of hearing, and internationals students. Hours would change for breaks, intersession and summer semester. This position may support serving from 1500 to over 3000 customers (faculty, staff and students) in any one location on a daily basis.
Required Minimum Qualifications
5-7 years supervisory experience in high volume, (multi-unit) retail food service, catering and/or concessions.
5-7 experience in culinary/hospitality leadership including varied cooking experience including high volume and fine dining
Present numerical analytical data effectively to drive appropriate decision making; read and interpret written information with excellent attention to detail
Set and achieve challenging goals; Demonstrate persistence and overcome obstacles.
Ability to engage employees, customers and university officials in a way that creates and environment where customer satisfaction is critical to the success of the operations.

Advanced knowledge of all dining operations related hardware/software and equipment including but not limited to: delivery trucks, hot and cold hold boxes, food production equipment, point of sales, menu management systems buffet equipment.
